Exposición Panamá-Pacific Rum, a Spanish-style molasses-derived spirit, is crafted with meticulous care at the San Carlos distillery, nestled in the Provincia de Herrera region of Panamá. The hot and humid climate, with an average temperature of 35° C (95° F), provides the perfect setting for aging rum. Our commitment to quality is unwavering, with every bottle reflecting the age of the youngest rum in the blend, ensuring a product that has matured to perfection under the watchful eyes of our quality control team.

From Field to Distillery: The Craft of Rum Making

Our journey begins in the verdant interior of Panamá, in Provincia de Herrera, where sugarcane is harvested at its peak from January to May. Within twelve hours of harvesting, the cane's juices are extracted, capturing their bright, fresh sweetness. This juice is then concentrated into a rich molasses, fermented with pineapple-derived yeasts, and distilled to strengthen the low-alcohol mash.

Embracing the traditional Cuban methods of rum production, we distill our fermented molasses in a historic copper Coffey column still, achieving a slightly lower proof to enhance the rum's rich flavor and character. Following distillation, the rum is aged in Kentucky bourbon casks for three years. Each batch is meticulously reviewed for quality, with some selected for extended aging in exhausted Tennessee and Canadian whiskey barrels. This process allows for a subtle infusion of vanilla, caramel, and butterscotch notes, enriching the rum's flavor without overwhelming its essence.

The 23 Year Expression: A Symphony of Aromas and Flavors

Our esteemed 23 Year expression begins its aging journey in used American Oak bourbon whiskey casks for three years, followed by a 20-year maturation period in toasted Tennessee and Canadian rye whiskey casks. This careful aging fosters a harmonious balance between the rum’s core qualities and the nuanced characteristics introduced by the oak.

Upon opening, this exquisite rum reveals aromas of vanilla, tannins, and Irish butter-toasted sugar, complemented by notes of coconut, banana, and cherry-almond pastry. The palate is greeted with a delicate caramel butter, leading to a bright warmth that unfolds into rich wood, more cherry-almond, and crushed cacao nibs. The experience culminates in a finish where delicious dessert notes gracefully fade into wood, leaving a lasting impression of complexity and craftsmanship.
